Southern Fried Chicken

WHAT YOU NEED

  • 1 ½ kg chicken pieces
  • 2 cups buttermilk
  • 2 cups flour
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • Salt
  • Oil for frying
Before you start

STEP BY STEP

Method

  1. 1

    Pat 1.5 kg chicken pieces dry. Mix 2 cups buttermilk with 1 teaspoon salt, half the paprika, half the garlic powder and half the black pepper. Add the chicken, cover and refrigerate for at least 4 hours or overnight.

    In a wide bowl combine 2 cups flour with the remaining paprika, garlic powder, black pepper and 1 teaspoon salt. Remove the chicken from the refrigerator 20 minutes before coating, but do not leave it at room temperature longer than necessary.

    Lift one piece from the buttermilk, allow excess to drip off and press it firmly into the seasoned flour. For a craggier crust, drizzle 2 tablespoons buttermilk into the flour and rub into small flakes before coating. Rest coated pieces for 10 minutes.

    With adult supervision, heat 5 cm oil in a heavy deep pot to 170°C. Fry similar-sized pieces together without crowding, maintaining 165–175°C throughout cooking.

    Cook wings for roughly 8–10 minutes and larger thigh or drumstick pieces for 12–16 minutes, turning occasionally, until deeply golden and at least 75°C next to the bone. Time is only a guide; use a thermometer.

    Drain on a wire rack over a tray and rest for 5–8 minutes. Never stack hot pieces, and never add water or frozen food to hot oil.

    Serve while crisp. Cool leftovers promptly and reheat in a 190°C oven until piping hot rather than refrying.

Troubleshooting

If food browns too quickly, lower the heat. If it is pale or watery, cook in smaller batches and allow excess moisture to evaporate before adding more ingredients.

Serving

Serve Southern Fried Chicken at the temperature recommended in the method. Taste for seasoning only when the food is safe to sample, then add garnishes just before serving.

Storage and reheating

Cool leftovers promptly, transfer them to a clean airtight container and refrigerate within 2 hours. Reheat only the portion needed until piping hot, and follow local food-safety guidance.
