Popcorn Chicken

  • 1 cup flour
  • ½ cup cornflour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 egg
  • ½ cup milk
  • Salt and pepper
  • Oil for frying

STEP BY STEP

Method

  1. 1

    Prepare the chicken and workstation: cut 500 g boneless chicken into even 2–3 cm pieces, pat them dry with paper towel, and keep a clean tray ready for the coated pieces. Wash hands and sanitise the board immediately after handling raw chicken.

    Make the seasoned coating: in a wide bowl whisk 1 cup flour, 1/2 cup cornflour, 1 teaspoon paprika, 1 teaspoon garlic powder, 3/4 teaspoon salt and 1/4 teaspoon black pepper until the colour is even and there are no seasoning clumps.

    Make the wet mixture: in a second bowl whisk 1 egg with 1/2 cup milk until completely blended. Add the chicken pieces and turn them so every surface is wet.

    Coat in batches: lift several chicken pieces from the egg mixture, let excess liquid drip off, then press them firmly into the seasoned flour. Toss, squeeze the coating onto the chicken and place the pieces on the clean tray. Rest the coating for 8–10 minutes so it adheres better.

    With adult supervision, pour oil into a deep heavy pan to a depth of about 4 cm and heat it to 175°C. Use a kitchen thermometer; oil that is too cool makes greasy chicken, while oil that is too hot darkens the coating before the centre cooks.

  6. 6

    Lower chicken into the oil in small batches without crowding the pan. Fry for about 4–6 minutes, turning once or twice, until deep golden, crisp and at least 75°C in the thickest piece. Let the oil return to 175°C between batches.

  7. 7

    Transfer the cooked chicken to a wire rack over a tray rather than piling it up, which would trap steam and soften the crust. Rest for 3 minutes, season lightly while hot and serve with a safe dipping sauce.

Troubleshooting

If food browns too quickly, lower the heat. If it is pale or watery, cook in smaller batches and allow excess moisture to evaporate before adding more ingredients.

Serving

Serve Popcorn Chicken at the temperature recommended in the method. Taste for seasoning only when the food is safe to sample, then add garnishes just before serving.

Storage and reheating

Cool leftovers promptly, transfer them to a clean airtight container and refrigerate within 2 hours. Reheat only the portion needed until piping hot, and follow local food-safety guidance.
