Fluffy Breakfast Pancakes

WHAT YOU NEED

  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 egg
  • ¾ cup milk
  • 2 tbsp melted butter
  • Pinch of salt

STEP BY STEP

Method

  1. 1

    Measure 1 cup flour, 2 tablespoons sugar, 2 teaspoons baking powder and a pinch of salt into a bowl. Whisk for 20 seconds so the baking powder is evenly distributed.

    In a second bowl whisk 1 egg, 3/4 cup milk and 2 tablespoons melted butter until smooth. Let very hot butter cool slightly first so it does not cook the egg.

    Pour the wet mixture into the dry ingredients. Fold gently just until no large dry pockets remain; a few small lumps are desirable. Rest the batter for 5–10 minutes while the pan heats.

    Heat a non-stick pan or griddle over medium-low heat. Lightly grease it and test with a small drop of batter; it should sizzle gently rather than burn immediately.

    Pour about 1/4 cup batter per pancake. Cook for 2–3 minutes until bubbles appear across the surface, the edges look set and the underside is golden. Flip once and cook for another 1–2 minutes.

    Keep finished pancakes warm on a rack or uncovered plate so steam does not make them soggy. Serve promptly with fruit, yogurt or a small amount of syrup.

Troubleshooting

If food browns too quickly, lower the heat. If it is pale or watery, cook in smaller batches and allow excess moisture to evaporate before adding more ingredients.

Serving

Storage and reheating
