Onigiri Rice Balls

WHAT YOU NEED

  • Nori strips
  • Salt
  • Tuna mayo, salmon or vegetables for filling

STEP BY STEP

Method

  1. 1

    Cook enough short-grain rice to yield 3 cups, then leave it covered for 10 minutes. Prepare the chosen tuna-mayo, cooked salmon or vegetable filling in small portions, cut nori into strips and set out sesame seeds and a bowl of lightly salted water.

    Shape the rice while it is warm enough to stick but cool enough to handle safely. Wet and lightly salt clean hands, then place about 1/2 cup rice in one palm and flatten it into a thick disk.

    Place 1–2 teaspoons filling in the centre, keeping it away from the edges. Fold the rice around it and add a little more rice if needed so the filling is fully enclosed.

    Press gently into a triangle or round shape, rotating as you work. Use enough pressure to hold the grains together without crushing them into paste.

  5. 5

    Wrap a nori strip around the lower portion and sprinkle with sesame seeds. Repeat, wetting hands between rice balls to prevent sticking.

    Serve the same day. Fillings containing fish or mayonnaise must stay refrigerated, and rice should not remain at room temperature for long periods.

Troubleshooting

If food browns too quickly, lower the heat. If it is pale or watery, cook in smaller batches and allow excess moisture to evaporate before adding more ingredients.

Serving

Serve Onigiri Rice Balls at the temperature recommended in the method. Taste for seasoning only when the food is safe to sample, then add garnishes just before serving.

Storage and reheating

Cool leftovers promptly, transfer them to a clean airtight container and refrigerate within 2 hours. Reheat only the portion needed until piping hot, and follow local food-safety guidance.
