WHAT YOU NEED

  • 3 cups black-eyed beans
  • 1 red pepper
  • 2 tomatoes
  • 1 onion
  • ¼ cup palm oil
  • Ground crayfish, optional
  • Salt and seasoning
Before you start

STEP BY STEP

Method

  1. 1

    Sort and rinse 3 cups black-eyed beans, removing stones or damaged beans. Cover with plenty of water and soak for 4 hours if possible to shorten cooking time, then drain.

    Place the beans in a large pot, cover with fresh water by 5 cm and bring to a boil. Reduce to a steady simmer and cook for 45–75 minutes, adding hot water as needed, until very tender but not completely broken down. Do not add salt early because it can slow softening.

  3. 3

    Blend 1 red pepper, 2 tomatoes and half of the onion until smooth; slice the remaining onion. Heat 1/4 cup palm oil in a separate pot over medium heat, add the sliced onion and cook for 3 minutes.

    Carefully add the pepper-tomato blend and cook uncovered for 12–18 minutes, stirring regularly, until reduced, darker and no longer watery. Add ground crayfish if using, seasoning and salt to taste.

    Add the cooked beans with enough of their liquid to create a thick stew. Simmer gently for 10–15 minutes, stirring from the bottom to prevent sticking, until the flavours combine and the sauce coats the beans.

    Taste for seasoning and adjust the consistency with hot water if necessary. Rest for 5 minutes and serve warm with bread, rice, plantain or garri.

Troubleshooting

If food browns too quickly, lower the heat. If it is pale or watery, cook in smaller batches and allow excess moisture to evaporate before adding more ingredients.

Serving

Serve Ewa Riro at the temperature recommended in the method. Taste for seasoning only when the food is safe to sample, then add garnishes just before serving.

Storage and reheating

Cool leftovers promptly, transfer them to a clean airtight container and refrigerate within 2 hours. Reheat only the portion needed until piping hot, and follow local food-safety guidance.
