Classic French Toast

WHAT YOU NEED

  • 3 eggs
  • ¾ cup milk
  • 1 tsp vanilla
  • ½ tsp cinnamon

STEP BY STEP

Method

  1. 1

    In a shallow bowl whisk 3 eggs, 3/4 cup milk, 1 teaspoon vanilla and 1/2 teaspoon cinnamon until no streaks of egg white remain. Use bread that is slightly dry or thickly sliced so it absorbs custard without collapsing.

    Heat a large non-stick frying pan over medium-low heat and add about 1 teaspoon butter. The butter should foam gently; if it turns dark immediately, lower the heat.

    Dip each bread slice into the custard for 5–8 seconds per side, allowing it to absorb liquid without becoming saturated. Lift it carefully and let excess custard drip back into the bowl.

    Cook 2–3 slices at a time for 2–3 minutes on the first side until golden brown and set around the edges. Flip once and cook for another 2 minutes until the centre is hot and no wet egg remains.

    Wipe out any burnt butter between batches and add fresh butter as needed. Keep cooked slices on a wire rack in a low oven rather than stacking them, which traps steam.

    Serve hot with fruit and a modest amount of syrup. Discard unused custard because it has contacted raw egg and bread.

Troubleshooting

If food browns too quickly, lower the heat. If it is pale or watery, cook in smaller batches and allow excess moisture to evaporate before adding more ingredients.

Serving

Serve Classic French Toast at the temperature recommended in the method. Taste for seasoning only when the food is safe to sample, then add garnishes just before serving.

Storage and reheating

Cool leftovers promptly, transfer them to a clean airtight container and refrigerate within 2 hours. Reheat only the portion needed until piping hot, and follow local food-safety guidance.
